The Pepper Process
Stage 1 - Planting
Young pepper plants are set in the ground around new brick poles.
Stage 2 - Growing
The immature pepper starts to grow on the vines.
Stage 3 - Maturing
The pepper starts to grow and mature on the vines that now have grown to a thick leafy cover around the poles.
Stage 4 - Harvesting
The mature pepper is harvested from the plants and is sorted ready for drying.
Stage 5 - Drying
The peppercorns are sun-dried on bamboo mats for several days.
Stage 6 - Sorting
The dried peppercorns are sterilised and sorted depending on size and quality.
Stage 7 - Packing
The pepper is weighed and vacuum packed into bags to ensure it is as fresh as possible when it reaches you.
